where the river and sea inevitably meet
it spent a week macerating on skins before being pressed off to chestnut barrels for a year
Oolithe, 2022 accessories Tropical bubblyOn the more mineral, livelier side of orange, the wine takes on the characteristics of its oolitic limestone terroir. Combining grapes from 25 year old vines Sylvaner, Pinot Gris, Riesling, Gewrztraminer, Auxerrois & Pinot Blanc, four days skin contact and stainless steel aging keeps things fresh, but a bounty of aromatics are offered in apple, elderberry, lily and citrus. Spicy persistence defines the enticing finish.
