and fermented for 6-7 days in a single open top slate fermenter in the winery adjacent the vineyard

This wine used to see 100% American oak but we find the focus has been sharpened by a move to seasoned French oak with just 10% new American oak in the mix

The loam and grey clay combination provides the wine with immense density of fruit flavour and velvety
