Vintage Japanese Signed Chef's Nakiri Hocho Sushi 6.5" Knife Laminated Samurai Steel Tansu Having been in storage forThis is a fine professional grade Nakiri Hocho sushi chef's knife from the mid to late 20th century. Made using the same methods used to create samurai swords. The blade was hand forged from a combination of hard high carbon white steel forge welded onto a piece of soft wrought iron. After forging and shaping it was set into a Magnolia wood handle. This Nakiri Hocho with a double sided blade used in the Japanese kitchen to prepare fish for sashimi,
