"The Wild Saison is one of the original Brett Saisons in bottle in Australia and is a Farmhouse Ale that has been fermented using our local strain of Brettanomyces wild yeast (found at our brewery) to give a more rustic & notable Farmhouse character

This is the second bottling of this wine with an additional 2 years under flor. Winemaking 20% fermented as whole bunches to dryness, balance whole bunch pressed. Matured in old French oak with wild yeast ferment and wild malo lactic fermentation (100%). Left on full lees and without topping for 4 years the barrels slowly began to ullage and develop a flor on
