Saga is a fairly new, Norwegian strawberry variety with a great sugar acid balance, incredible aromatics and a really dark, red color throughout its flesh. These special strawberries were picked at perfect ripeness, vacuum sealed and frozen throughout the harvest season to stock up enough for a batch. After thawing and cold soaking for a day, the strawberries were pressed and buckets of extraordinarily good
