The hot Mediterranean summers are akin to Heathcotes. Its these hot climate varieties that will become more prevalent in Australia as the climate changes. Ben has made this Fiano in a more textural style similar to his Chardonnay techniques. Natural ferment, time in barrels and on gross lees until bottling."
