Initial skin contact was followed by 7 days of cool fermentation with our Rhône isolate yeast and hand-plunging three times daily

A big and chewy wine on the tongue with excellent structure this wine is well built and could go another ten years

We didn't finish until the 1st of October as conditions were clement and thus there was no rush to finish
