In this eastern quarter of La Mancha near the historic city of Cuenca, vines grow between 1000 and 1200 meters above sea level. In summer, days are blistering hot and the nights are positively chilly. Rain is rare, so vines here are always thirsty, digging deep through thin soils and into the bedrock to find water.
